Simple and Delicious Egg Recipes
Eggs are such an amazing way to add protein into your diet! If you’re someone who likes eggs but finds them kind of boring or struggles to think of ways to cook them, then this is eggsactly the post for you!
Here are a few simple and delicious egg recipes that I really enjoy:
Egg Muffins
If you’re looking for a way to incorporate eggs into your breakfast without having to cook eggs every morning (who has time for that?!?) these egg muffins are perfect for you! I typically include sausage or bacon, mushrooms, spinach and green onions. Simply add your veggies and (cooked) meat into sprayed muffin tins and then pour whisked eggs (can also add milk in with eggs if you want) on top. Cook at 350 degrees for 25ish minutes.
Quiche
I love quiche so much. It’s such a versatile dish, acceptable for any meal of the day, and is incredibly delicious.

Shakshuka
I was introduced to this amazing dish in 2019 while participating in a study exchange program with students from Israel. The students taught us how to make shakshuka and it most definitely did not disappoint. When I make it at home, I’ll often serve it with feta cheese on top and with a naan bread on the side.
I loosely follow this recipe when I make shakshuka, but I exclude bell peppers, and opt for diced tomatoes instead of whole tomatoes.
Over Easy Eggs
I know this is more of a “standard” way to cook eggs but… have you ever tried putting over easy eggs on top of sweet potatoes? potatoes? hash browns? Over easy eggs are perfect for an additional burst of protein (not to mention flavour) for any meal of the day. When you break the yolk it creates a really nice sauce over whatever you’re eating!

I mentioned this recipe in my Whole 30 post, but it’s so good that it’s worth another mention. It’s super simple and extremely delicious.

Omelette Waffles
This is such a fun way to switch up your weekend breakfast. If you have a waffle maker but aren’t feeling waffles, try making omelette waffles with your choice of what to include in the egg batter - ham, spinach, green onion- whatever you want!
